My dad always grew tomatoes in our backyard and would often eat a tomato sandwich. I found it disgusting. I just wasn’t that into them. I loved ketchup and tomato sauce but just tomatoes on their own, did nothing for me. Caprese salad made me turn around a bit and cherry tomatoes I kinda can’t get enough of. As a single lady, I have a hard time going through an entire pint of them. I put them in a pasta salad or a small dish but it often feels like an endless supply and sadly most of them go into the compost. I bought a pint the other day and decided that none of these little guys would see the compost, NOT ONE. I thought about the initial salad that turned over my tomato leaf and decided a deconstructed caprese salad would be an easy and delicious thing to make. I hope you like it as much as I did.
Deconstructed Caprese Salad
1 cup sliced cherry tomatoes
1 clove garlic
6-8 mozzarella pearls cut in half
3 fresh basil leaves
3 slices of baguette bread
1 Tbsp olive oil
1/2 Tbsp balsamic vinegar
a pinch of salt
Combine all ingredients up until bread.
Mix oil and vinegar with salt and pour evenly over salad.
