Lavender Granola

I pride myself a tad on making a good batch of granola.  Granola is a great thing to make because you can really play around with flavors, use stuff you find in your pantry and it keeps well.  I am taking off for Cleveland this next week and my flight is at the horrible hour of 6:30am.  Since I know I won’t be waking up “extra early” to grab a bite, I decided to make a batch of granola.  It will be a great snack for the flight AND will be here when I return.  Needless to say, you may see a granola recipe from time to time up here.

Lavender Granola

makes approx. 3 cups

2 1/2 cups oats
1 cup vegetable oil
2 Tbsp Lavender & Sweet Orange Infused Honey from All Things Lavender
1/8 tsp cloves
1/4 tsp cinnamon
1/4 cup (or less) shredded coconut
1 Tbsp brown sugar
1/4 cup dried cranberries
a pinch of Culinary Lavender also from All Things Lavender
a pinch of Lavender Salt from Beautiful Briny Sea
*Optional are nuts. I just didn’t have any today

Add oats, spices, coconut, brown sugar, lavender and salt to bowl.
Heat oil and honey in small saucepan.
When just starting to boil, remove from stove and pour over oats.
Cook on 350 degrees, stirring often, for 30 min OR until a nice golden brown.
It’s great on it’s own, with milk or yogurt.
Store in air tight container in fridge for months!
