Spicy Burnt Sugar Popcorn

One thing I LOVE about May is that it is the Seattle International Film Festival.  It’s the first sign that things are moving towards full summer activities including picnics, bbq’s and parties!  I am a total nerd bird around SIFF.   I also enjoy sneaking in some delicious snacks to enjoy while I sit back and relax.  I recently went to the coolest store in Seattle (yes, I do own my own store and yes…I think this one is the coolest), E Smith Mercantile.  We ordered the burnt sugar popcorn and man, was it good!  I decided to make my own version which turned out pretty great if I do say so myself. You can add less cayenne or more to make it the perfect amount of spicy for you.

Spicy Burnt Sugar Popcorn

3 Tbsp canola oil, peanut oil or coconut oil
1/2 c. popcorn
3/4 c. brown or white sugar (i used brown here)
1/4 c. water
1/8 tsp cayenne pepper
1/8 tsp cinnamon
*I added Friends Forever salt by Beautiful Briny Sea but you can use regular sea salt as well
First make popcorn
I did 3 Tbsp of oil to 1/2 cup popcorn
*this does make more than you might want to eat on your own but was perfect for sharing with a friend at the movies.

For sugar:
Put sugar in a pot and cook on low heat until sugar melts.
Add water and the sugar will immediately begin to bubble.
While stirring, add spices.
Once it’s melted and a nice golden brown color remove from heat

Melt butter on stove top or in microwave and add to popcorn
*it’s really up to you how much butter to use

Pour sugar over popcorn and mix well
Add salt and enjoy!
