Rhubarb Gingertini

I am not one to drink at home alone.  I feel like drinking is for socializing and I leave it at that.  But the sun is shining and my days off are Sundays and Mondays; days no one else wants to go out, and sometimes a woman deserves a drink.  I recently bought rhubarb at the Ballard Farmer’s Market and decided to whip up some syrup for spring beverages.  The great part was that after I made the syrup, I was able to save the vegetable (which I always believed to be a fruit until now) for a sundae topping.  So yeah, basically this has been the best Sunday.

Rhubarb Syrup:
3 cups chopped rhubarb
3/4 cups sugar
3/4 cups water

Combine the above in a pot and simmer for 20 min.
Pour over sieve and save vegetable in jar for sundae topping

Rhubarb Gingertini:
Shot of Vodka
1/2 shot of rhubarb syrup
Handful of Ice Cubes

Place above ingredients into a cocktail shaker and shake to combine.

Pour into glass and add ginger beer to your liking.
